Enjoy a guided tour of the Borda Sabaté winery high in the Pyrenees and discover a new eco-friendly way of harvesting grapes and producing wines. This practice, which is called extreme winemaking, has been turning heads among connoisseurs who have been beating a path to the slopes of Muxella in the parish of Sant Julia de Loria. As you’ll see yourself, the journey up in also something of an adventure.

The winery follows basic tenets and favours moderate yields, traditional methods of work and herbicides, and is against any kind of manipulation, especially genetically modified organisms. It defends the authenticity and character of each variety and each terroir. The grapes are grown at an altitude of between 1,100 and 1,200 metres on the slopes of Muxella, where they are subjected to strong temperature contrasts between day and night. This slows down the fullness of its aromatic potential and gives its distinctive flavour and sublime freshness. The result is vigorous wines that emphasise the grape’s character while offering a delicate aroma that delights the most refined of palates.

The grapes are harvested manually and after a careful selection process a percentage of noble rot is allowed thus beginning the transformation into wine. See for yourself this ancient process carried out with the latest technology.

Reaching Borda Sabaté is part of the fun as the road is very steep and it requires 4x4 vehicles to climb them. Once at the top, you can enjoy spectacular views of the entire valley.
